Ice Cream Sandwiches
1-1/4 cup dry bakers cocoa powder
Mix dry ingredients.
2-1/2 sticks soft butter
Add dry mix, and fold, adding 12 oz. chopped semi-sweet chocolate and 1/2 cup drained, chopped black cherries.
Place on greased cookie sheet--(using an ice-cream scoop to measure 2 to a row 4 rows deep (these will spread to make BIG sandwich style cookies).
Bake at 350 degrees for 10 minutes.
Remove from oven and cool for 2 or 3 minutes, then place cookies on cake racks to finish cooling.
Top a cookie with ice-cream, cover with another cookie, wrap in waxed paper and place in freezer in closed container till ready to eat.
