Frozen Raspberry Squares
1 cup chocolate wafer crumbs
3 Tbsp. melted butter
1 teas. pure vanilla extract
1/4 cup pistachios, put through a blender
1-1/2 quarts soft pistachio ice cream
1 jar (8 oz) seedless raspberry jam
chocolate sauce
Line 2 ice-cube trays with foil. Mix crumbs, butter, vanilla and
nuts thoroughly. Spread half of crumbs on bottom of trays.
Spread the ice cream on this. Top with a layer of raspberry jam.
Spread the rest of crumbs on top.
Freeze in freezer. To serve, cut into squares along with chocolate
sauce |
