New Orleans Rice Fritters or Calas Recipe

2 cups cooked rice
3 large eggs, beaten
1/2 cup sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1/4 teaspoon salt
1/2 teaspoon vanilla extract
2 1/4 teaspoons baking powder
1 cup flour
Oil for deep frying
Confectioners' sugar

In a large bowl, combine rice, eggs, sugar, cinnamon, nutmeg, salt, vanilla and baking powder. Add flour and stir to make a heavy batter.

Heat oil in a medium saucepan or deep fryer to 365 degrees. Drop batter by teaspoonfuls into hot oil. Fry in batches until crisp and golden, about 4 minutes. Drain on paper towels, and sprinkle generously with powdered sugar.

Makes 40 or 50.
