Baked Beans

1 1/2 C. navy beans, rinsed, soaked overnight
3 1/2 C. water
1 T. tomato paste
1 onion, sliced
1 T. cider vinegar
2 T. molasses
1 t. dry mustard
1/8 t. cayenne pepper
1/4 t. salt

Drain soaked beans. Combine with the 3 1/2 cups water in large saucepan and bring to boil. Lower heat and simmer until tender, 1 1/2 to 2 hours. Drain and discard liquid.

Add remaining ingredients and combine in a 2 to 3 quart bean pot or ceramic baking dish, stirring well. Cover tightly and bake in 350�F. oven 45 minutes. Remove cover and bake another 30 to 45 minutes or until beans are very tender.

Makes 5 servings.
