Baked Beans

1 1/2 C. navy beans, rinsed, soaked overnight
3 1/2 C. water
1 T. tomato paste
1 onion, sliced
1 T. cider vinegar
2 T. molasses
1 t. dry mustard
1/8 t. cayenne pepper
1/4 t. salt

Drain soaked beans. Combine with the 3 1/2 cups water in large saucepan and bring to boil. Lower heat and simmer until tender, 1 1/2 to 2 hours. Drain and discard liquid.

Add remaining ingredients and combine in a 2 to 3 quart bean pot or ceramic baking dish, stirring well. Cover tightly and bake in 350F. oven 45 minutes. Remove cover and bake another 30 to 45 minutes or until beans are very tender.

Makes 5 servings.
