Chop Suey Salad

14 oz. chicken broth
1 C. Uncle Ben's Rice (do not use regular long grain rice!)
1 1/2 tsp. salt
4 green onions, sliced
1/2 C. vegetable oil
2 TBS. soy sauce
1 small jar diced pimento, drained
2 TBS. sesame seeds
2 C. diced chicken, turkey or pork (cooked)
14 oz. chop suey vegetables, drained
4 oz. jar sliced mushrooms

Add enough water to broth to make 2 1/2 C. Bring to a boil. Stir in rice and 1 tsp salt. Cover and simmer 20 minutes. Remove from heat and let stand until liquid is absorbed (5 minutes). Transfer rice to a large bowl.

In a small bowl combine oil, soy sauce, 1/2 tsp. salt, and sesame seeds. Mix well. Stir into rice. Cover and refrigerate 1 hour.

Stir in remaining ingredients. Cover and chill 3 hours. To serve warm, put in microwave to reheat.
