Coca-Cola Cake
Cake:
2 C. flour
2 C. sugar
1 t. baking soda
1/4 t. salt
2 eggs
1 t. vanilla extract
1/2 cup buttermilk
1 C. unsalted butter
1 C. cola
2 T. unsweetened cocoa powder
Frosting:
1/2 C. butter, at room temperature
2 t. unsweetened cocoa powder
pinch salt
1 lb. (about 4 C.) powdered sugar
1/4 C. cola
1 t. vanilla extract
1 C. chopped nuts
Set the oven to 350�F. Grease a 13 x 9-inch baking pan and set it aside.
For the cake, mix the flour, sugar, baking soda and salt in a large bowl. In a
separate bowl, mix the eggs, vanilla and buttermilk and add to the flour
mixture. Bring the butter, cola and cocoa powder to a boil in a saucepan and add
to the flour mixture. Mix until everything is well blended.
Pour the batter into the prepared pan. Bake for 35-45 minutes or until a tester
comes out clean. Remove the cake from the oven and allow it to cool in the pan
on a cake rack.
Meanwhile, make the frosting by creaming together the butter, cocoa powder, salt
and powdered sugar, using an electric mixer. Add the cola and vanilla and mix
thoroughly. Stir in the nuts by hand. Frost the cooled cake and serve from the
pan.
Makes about 12 servings.
