Eastern Shore Barbecue Sauce
5 Chicken Breasts
1 C. vinegar
3 oz. oil
2 1/2 T. salt
1/4 t. pepper
1 1/2 t. poultry seasoning
2 Red Bell Peppers
optional: feta cheese
Bring all ingredients to boil and use immediately or put in refrigerator to have on hand to use.
Add red pepper and chicken; toss and let marinade at room temperature 30 minutes.
Prepare barbecue ( medium-high heat) or preheat broiler. Thread chicken and red bell pepper pieces alternately onto skewers. Sprinkle with salt and pepper. Grill or broil until chicken is cooked through, turning occasionally, about 8 minutes. Baste often.
Transfer brochettes to platter. Sprinkle with 2 Tablespoons feta cheese and serve.
