Grilled Turkey, Mushroom and Vegetable Kebabs
4 large white mushrooms
4 fresh shiitake mushrooms
1 red bell pepper, seeded and quartered
2 small yellow summer squash, halved
1 small red onion, quartered
1/4 C. teriyaki sauce
1 T. fresh lemon juice
2 T. olive oil
1 lb. boneless turkey breast cut into 1-inch cubes
In large self-sealing bag, combine mushrooms, bell pepper, squash, onion, teriyaki sauce, lemon juice, and oil. Seal bag and turn to coat vegetables evenly. Refrigerate at least 1 hour or overnight.
Thread vegetables and turkey cubes onto 4 skewers, reserving marinade. Place skewers on hot grill and grill until evenly browned, turning frequently and brushing with marinade as needed to keep vegetables and turkey moist, 5 to 10 minutes.
