Hot Sweet Vidalia Onion Relish
1 T. oil
1 Vidalia onion, diced
One-fourth each: red and green bell pepper, diced
2 T. chopped fresh parsley
1 T. lime juice
1 t. chopped fresh mint
1/2 t. honey
1/4 t. each: salt and cayenne pepper
In skillet, heat oil on medium-high heat; saute onion and peppers until wilted
slightly and onions are translucent. Remove from heat and stir in remaining
ingredients. Serve warm.
Makes 1 1/2 cups.
