Pasta Salad with Bacon, Red Roasted Pepper
1 lb. (16 oz) Ronzoni penne rigate
� lb. (8 oz) bacon (chopped)
7 oz. sliced roasted red peppers
1 bunch cilantro (chopped)
2 stalks celery (diced)
1 medium red onion (diced)
2 cloves garlic (diced)
Hot pepper sauce (to taste)
1/2 cup Mayo
3 tbs. Balsamic vinegar
1/8 tsp. salt & pepper
Cook pasta according to package directions, drain. Meanwhile, in
skillet, fry bacon until crispy. In large bowl combine pasta, bacon and
all other ingredients. Chill and serve. |
