Tortellini Salad
1 lb. tortellini, cooked
3 large tomatoes, chunked
3/4 c. Feta cheese
Dressing
3 Tbsp. lemon juice
1/2 c. olive oil
1/2 tsp. oregano
1/2 tsp. thyme
1/2 tsp. basil
1 clove garlic, minced
Combine tortellini, tomatoes. Crumble cheese into mixture. In a separate
bowl, combine dressing ingredients - lemon juice, oil, herbs, garlic.
Pour dressing over tortellini. Let marinate at least 4 hours. If longer,
store in refrigerator until 1 - 2 hours before serving. Bring to room
temperature for serving.
Variations:
Add chopped black olives, or marinated artichoke hearts. |
