4 medium (about 2 pounds) green summer squash (such as calabacita or zucchini), cubed
2 small green chiles, chopped
1 small onion, chopped
1 clove garlic, minced
3 tablespoons olive oil
1 cup corn kernels, canned or frozen
1 cup milk
Salt and pepper to taste

Sauté squash, green chile, onion and garlic in oil until tender. Add corn and milk and simmer for 15 minutes. Season with salt and pepper to taste.

Makes 4 servings.
