Calabacitas
4 medium (about 2 pounds) green summer squash (such as calabacita or zucchini),
cubed
2 small green chiles, chopped
1 small onion, chopped
1 clove garlic, minced
3 tablespoons olive oil
1 cup corn kernels, canned or frozen
1 cup milk
Salt and pepper to taste
Saut� squash, green chile, onion and garlic in oil until
tender. Add corn and milk and simmer for 15 minutes. Season with salt and pepper
to taste.
Makes 4 servings.
