Fruit Salsa
1 cup diced cantaloupe
1 cup diced watermelon
1 cup peeled, seeded and diced cucumber
4 large tomatoes, seeded and diced (about 2-1/2 cups)
1/2 cup chopped red onion
1/4 cup fresh lime juice
3 tablespoons chopped cilantro
1 jalapeno pepper, minced (about 2 tablespoons)
1 teaspoon salt
1/4 teaspoon ground black pepper
Mix all ingredients. Chill mixture for 1 hour, then serve with tortilla chips. |
