Mexican Salad
1 7 ounces chicken breast
1/2 head of lettuce
1 green or red bell pepper
1 sliced romaine tomato
1/3 cup medium red onion
1 teaspoon chili powder
1 tablespoon sour cream
1/2 sliced avocado
1/2 cup jack or cheddar cheese
Pinch of salt
Pinch of pepper
Saute chicken until nearly cooked, then add bell peppers and onion. Cook until
lightly browned. Add salt and pepper to taste and chili powder for color. Place
mixture on top of lettuce. Top with tomatoes, sour cream, avocado, cheese and
special ranch dressing.
Special Dressing:
1/2 cup ranch dressing
1/2 cup avocado
1 pinch cilantro
Mix avocado and cilantro into ranch dressing. |
