Harvest Pumpkin Butter

1 C. cooked or canned pumpkin
1/2 C. honey
1/4 C. molasses
1 T. lemon juice
3/4 tsp. ground cinnamon

In a small saucepan, combine the first 5 ingredients; mix well.
Bring to a boil, stirring frequently. Reduce heat, simmer uncovered for 15 minutes or until thickened.
Refrigerate for at least 1 hour.

Makes 1 1/4 cups
