Lime Dill Mustard
2 cups yellow mustard seed (whole)
2 cups yellow mustard seed powder (ground)
2 cups white wine vinegar
3 teaspoons dill, minced
1 lime, juiced and rind grated
1 1/2 teaspoons kosher salt
3 tablespoons honey
1 tablespoon capers
Blend mustard seed and powder with 2 cups boiling water. Stir in
vinegar and 2 teaspoons dill and let soak several hours (or
overnight). Put mixture into a food processor or blender with lime
juice and rind, salt and honey. Blend until smooth and thick.
Cook over low heat for 10-15 minutes, until mixture is hot through.
Remove from heat and stir in remaining dill and capers. Spoon
mustard into jars. Makes 6 cups |
