Apple Blueberry Syrup
1/2 cup frozen apple juice concentrate, thawed
2 teaspoons sugar
1-1/2 tablespoons cornstarch
1 cup boiling water
1 16-ounce package frozen blueberries, thawed and drained
1 tablespoon fresh
Combine apple juice, sugar, and cornstarch in a saucepan. Stir until
well blended. Add boiling water, and cook over medium heat, stirring
constantly, until mixture comes to a full boil. Stir in blueberries
and lemon juice. Reduce heat and simmer for 3 minutes, stirring
constantly. Serve warm or chilled over pancakes, biscuits, or plain
cakes. |
