Spicy Ginger Truffles

3/4 cup heavy cream

1-inch piece of fresh ginger root, roughly chopped

6 ounces of 65% dark chocolate, chopped

1 tablespoon unsalted butter

1/4 cup chopped candied ginger

Candied ginger to garnish

Bring heavy cream to a simmer and steep ginger root for 30 minutes. Bring cream back to a simmer and strain over chopped chocolate and butter. Gently stir to melt. Cool mixture until soft and fold in candied ginger. When completely cool, scoop ganache into balls and chill in the refrigerator.

The truffles can be dipped into tempered chocolate or rolled into cocoa powder and garnished with a small piece of candied ginger.
