2 C. all-purpose flour
1 T. baking powder
1/4 t. salt
1 egg, beaten
1/4 C. olive or vegetable oil
1/4 C. packed brown sugar
8 oz. can crushed pineapple, undrained
1/2 C. shredded sharp cheddar cheese
2/3 C. finely chopped Canadian bacon (about 3 1/2 oz.)
Preheat oven to 375°F. Spray muffin pans with vegetable cooking spray.
Combine flour, baking powder and salt in medium bowl; set aside.
Beat together egg, oil and sugar in medium bowl. Stir in flour mixture, pineapple, cheese and bacon until just mixed. Spoon batter into muffin pans, filling about 2/3full. Bake at 375°F. for 25 to 30 minutes or until toothpick inserted in centers comes out clean. Remove muffins from pans onto wire rack to cool slightly. Best if served warm.
