Parmesan Tuiles

Makes 2 dozen

1 8-ounce wedge of Parmesan cheese


Heat the oven to 375 degrees. Shred the cheese, using the large holes of a box grater or the coarse shredding disc of a food processor. Drop the cheese by slightly rounded tablespoons 3 inches apart on a baking sheet lined with Sil-Pat.

Spread each mound into a 3-inch circle with the back of a spoon. Dust each circle lightly with paprika. Bake about 10 minutes or until golden brown. Cool on the Sil-Pat.

Very carefully remove the circles to a serving plate and cover with plastic wrap until time to serve.
