Peachy Pork Picante

1 (1-pound) boneless pork loin

1 tablespoon taco seasoning mix

2 tablespoons minced parsley

2 teaspoons vegetable oil

1 cup (8 ounces) Pace Mild Chunky Salsa

1/4 cup peach preserves (apricot preserves may be substituted)

Cut pork in 1-inch cubes. Combine taco seasoning and parsley; coat pork with mixture.

Heat oil in heavy skillet over medium high heat. Add pork, cook and stir to brown about 3-5 minutes. Add salsa to pan, lower heat, cook and simmer until tender, about 20 minutes (or pressure cook 7-10 minutes).

Add preserves; mix well, heat and serve.

Good served over rice with corn and black bean salad.

Makes 4 servings.

Approximate nutritional values per serving: 240 calories, 24 g protein, 19 g carbohydrate, 1 g dietary fiber, 6 g fat, 75 mg cholesterol, 580 mg sodium.
