Banana Split Muffins
In another bowl, combine bananas and mayonnaise. Stir into the dry ingredients just until moistened. Fill greased or paper-lined muffin cups three-fourths full.
Bake at 375ºF for 20-25 minutes or until muffins test done. Press a cherry half, cut side down, into the top of each muffin. Cool for 5 minutes before removing from pan to a wire rack. Yield: 1 dozen.
*Note: Light or fat-free mayonnaise may not be substituted for regular mayonnaise.
