Blueberry Ice Cream Muffins
1 cup vanilla ice cream, softened
1 cup self-rising flour
1 cup fresh blueberries
Preheat oven to 350 degrees.
In a large bowl, combine ice cream and flour, stirring just until moistened.
Fold in blueberries.
Line miniature muffin pans with paper or coat with butter or vegetable oil
spray. Spoon batter into muffin pans
2/3 full. Bake 20 to 25 minutes.
Makes 1-1/2 dozen.
