Feta Corn Muffins
Can be prepared in 45 minutes or less.
1 cup yellow cornmeal
2/3 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon finely chopped fresh sage leaves
1 cup crumbled feta cheese (about 6 ounces)
1 cup milk
1 large egg
1/2 stick (1/4 cup) unsalted butter, melted
Preheat oven to 425°F. and butter well twelve 1/3-cup muffin tins.
In a large bowl whisk together cornmeal, flour, baking powder, baking soda, and
salt. Add sage and feta and toss well.
