Malted Vanilla Muffins
Lightly grease muffin pan cups or line with paper liners. In a large bowl, combine flour, sugar, malted milk powder, baking powder, baking soda, and salt.
In another bowl, combine egg, yogurt, and vanilla; pour over dry ingredients. Add melted butter and stir just to blend (just a few strokes, do not overmix). Spoon batter evenly in prepared muffin pan. Sprinkle tops with sugar-malted milk mixture.
Bake for 18 to 20 minutes or until muffins test done. Cool in pan on wire rack.
Yield: one dozen.
