Orange Cream Cheese Muffins
1 3/4 cups flour
1/4 cup sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/4 cup chopped nuts
1 egg
1/3 cup orange juice
1/3 cup orange marmalade
1/4 cup milk
1/4 cup oil
1 jar sweet orange marmalade
3 ounces softened cream cheese
ICING:
3 ounces softened cream cheese
2 cups powdered sugar
1/4 cup sweet marmalade
Sift dry ingredients into a bowl. Make a well in the center. Combine egg, orange
juice, orange marmalade, milk and oil. Add all at once to dry ingredients. Stir
quickly, just until moistened. Fill greased muffin tins 2/3 full. Bake at 425�F
for 20 to 25 minutes. When cool, frost each muffin with icing. Icing: Combine
ingredients all together and spread on cooled muffins. |
