Peanut Butter Cereal Muffins
1 1/4 Cups Unsifted Flour
1/3 Cup Sugar
1 tbsp. Baking Powder
1/2 tsp. Salt
2 Cups Whole Bran Cereal, Corn flakes, or Whole Wheat Flakes
1 1/4 Cups Skim Milk
1/2 Cup Skippy Creamy or Chunk Peanut Butter
1 Egg, slightly beaten
1/2 Cup Raisins
Preheat oven to 400º F.
Grease twelve 2 1/2x1 1/4-in. muffin pan cups.
In small bowl, stir flour, sugar, baking powder, and salt.
In medium bowl, combine cereal and milk. Let stand 1 to 2 minutes or until
cereal is softened. Stir in peanut butter and egg until well mixed. Add raisins.
Stir in flour mixture just until mixed.
Divide among prepared muffin pan cups, nearly filling. Bake 25-30 minutes or
until golden brown.
Immediately remove muffins from pan. Cool on wire rack or serve warm.
