Yugoslavian Potato Muffins

2 c Flour

4 ts Baking powder

1 1/2 ts Salt

2 ts Dried onion flakes

1 tb Sugar

1 t Caraway seeds

2 Eggs

1 c Applesauce

6 tb Melted butter

1 1/2 c Grated raw potatoes

Blend first 6 ingredients in a bowl. Whisk remaining ingredients in another bowl. Pour wet ingredients into flour mixture stirring quickly. Spoon into greased muffin tins. Bake 375 for 25 minutes or browned and tested done. Serve warm with butter or honey.
