Red Delicious Orange Tea Muffins
1 1/2 cup all-purpose flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup butter, melted
1/2 cup fresh orange juice
grated rind of 1 orange
1 cup fresh or frozen raspberries, optional
1/2 cup dry flaked coconut, optional
Combine flour, sugar, baking powder and salt and blend well.
In another bowl mix butter, orange juice, eggs and orange
rind. Beat. Add raspberries and coconut if desired.
Stir liquid into dry mixture and blend until moistened. Spoon
into well-greased muffin cups.
Bake at 375 degrees for 15 to 20 minutes.
Makes 12 muffins.
