Strawberry Shortcake Muffins
In large bowl, combine flour, sugar, baking powder and baking soda.
Mix the frozen strawberries in with flour, stirring until berries are just coated.
In separate bowl, combine buttermilk, eggs and whites, and oil. Combine with flower mixture, not overmixing.
Fill each muffin cup about 3/4 full with batter, then sprinkle about 1/4 tsp of sugar on top of each.
Bake for 15-20 minutes.
Makes 36 muffins.
