Banana Nut Pancakes

SYRUP:
1/2 Cup corn syrup
1/2 Cup water
1/2 Cup granulated sugar
1/4 Tsp banana extract or flavoring

PANCAKES:
1-1/4 Cups all-purpose flour
1-1/2 Cups buttermilk
1 Large egg
1/4 Cup vegetable oil
2 Tbsp granulated sugar
1 Tsp baking powder
1 Tsp baking soda
1/2 Tbsp banana extract or flavoring
1/4 Tsp salt
2/3 Cup chopped pecans
1 Ripe banana

Make syrup by combining all syrup ingredients (except banana extract) in small pan, high heat, stir occasionally. When mixture begins to boil, remove from heat. Stir in the banana extract.

In large bowl, combine all ingredients for pancakes except pecans and banana. Use an electric mixer to blend until smooth.

Heat large frying pan or griddle over med heat. Coat it with butter or nonstick spray when hot.

Pour 1/4-cup amounts of batter into pan. Batter should spread to about 4" diameter. Sprinkle about 1/2-Tbsp pecans in center of each pancake, immediately after pouring batter in pan.

Cook pancakes for 1-2 minutes per side or until golden brown.

Slice banana, serve on top of stack of pancakes.

Sprinkle pecans on top.
