Flapjacks Souffl�
6 eggs, separated
1/2 cup buttermilk pancake mix
1/2 teas. salt
1/2 cup sour cream
melted butter
In a bowl, beat egg yolks until thickened. Add pancake mix, salt and sour cream
and stir to combine.
In another bowl, beat egg whites until stiff. Fold into the yolk mixture.
Preheat griddle over medium hot heat. When hot, brush lightly with melted
butter. Pour 1/3 cup of batter onto hot griddle. Cook each side until golden
brown.
