German Apple Pancake
1 cup peeled, cored and thinly sliced Granny Smith, or other
In heavy ovenproof 10" skillet cook apple slices in butter over moderate heat (turn once) for 2 minutes. Remove skillet from heat.
In small bowl combine 1/3 cup sugar with cinnamon. Sprinkle over apples.
In another bowl whisk together eggs and the yolk.
In another bowl whisk together flour, remaining 1 tsp sugar and salt. Whisk in cream. Whisk in the egg mixture.
Pour batter over apple mixture.
Bake pancake in skillet on middle rack of oven for 12-15 minutes, or until it is puffed and golden. Invert it onto a heated platter.
