Sourdough Hot Cakes and Waffles 2
eggs, separated For Waffles: Beat egg yolks with salt until thick and light. Stir in starter. Beat egg whites until stiff, adding sugar. Fold whites gently into starter mixture. Dissolve baking soda in water and carefully add to the batter. For Waffles: add butter just before adding the soda and water. Cook on ungreased griddle or waffle iron. To keep starter going add 1 cup flour and 1 cup water and let
sit out overnight to work. After 3 days, add 1/2 cup flour and 1/2 cup water and let sit for 8 hours. Then add 1 cup flour and 1 cup water. Stir in and let sit for 8 hours. Now you may add 2 cups flour and 2 cups water. Let sit for 8 hours, As you see, it may be doubled every 8 hours. . At this point there is enough starter in the jar where it can be used and still leave at least a half cup starter in the jar. Store in the refrigerator and stir occasionally, through the week. Keep indefinitely. To use any recipe using sourdough it requires a little
