Rhubarb Pudding Pie Recipe


Rhubarb Pudding Pie

1 cup sugar
3 T flour
1/3 cup orange juice
3 cups rhubarb
2 egg yolks
1 T butter

Mix sugar & flour together. Add orange juice. Add to rhubarb and cook slowly til thickened, stirring constantly. Beat egg yolks slightly and add to rhubarb. Cook a few minutes longer. Remove from heat, add butter. Pour into dessert dishes and eat like this, or pour in pie crust and make meringue of egg whites.
