Banana Rice Pudding
3 cups rice milk or nonfat milk
1 cup short grain rice (arborio, Sweet, etc.)
3 ripe bananas, mashed
1/2 tsp. nutmeg
Preheat over to 350�F.
Mix all together well and pour into a 1-1/2 qt. casserole.
Bake for 1 to 1-1/2 hours, stirring occasionally, until rice is tender.
Makes 4 cups. |
