Camping Sweet Potato Pudding

1 pound sweet potatoes, peeled and quartered
6 eggs, beaten
3/4 pound powdered sugar
3/4 cup butter, melted
1/2 teaspoon grated nutmeg
1/4 teaspoon lemon peel
1/4 cup brandy
1 tablespoon sugar

Boil sweet potatoes until very tender. Rub them, while hot, through a
colander.

Add the eggs, powdered sugar, butter, nutmeg, lemon peel, and brandy.

Mix thoroughly and place in a medium Dutch Oven. Place on a bed of coals.

Cook for 25 minutes or until firm. When done, sprinkle the top with sugar.
