Jamaican Coconut Pudding

1/2 shredded or flaked coconut
1/4 cup dry bread crumbs
1 cup milk
2 eggs
2 tbsp. butter
2 tbsp. sugar
1/8 tsp. salt

Preheat oven to 350ºF.

Put all ingredients in a blender and beat until smooth. Pour into a buttered pie dish.

Bake for 1 hour.

Serves 6.
