Almond Mushroom Wild Rice

3 C. uncooked wild rice

7 1/2 C. chicken broth

3 C. sliced fresh mushrooms

1 1/2 C. slivered almonds, toasted

6 T. butter, melted

6 T. chopped green onions

Rinse and drain rice; place in a 1 1/2 qt. baking dish coated with non-stick cooking spray.

Add the remaining ingredients; mix well.

Cover and bake at 325 F. for 1 1/2 to 2 hours or until liquid is absorbed and rice is tender.

Serves 18
