Artichoke Torte Recipe

Artichoke Torte
Great appetizer or serve as a vegetable dish

2 10-oz. pkg, frozen artichoke hearts
olive oil
fine dry bread crumbs
1 T. butter
1/2 cup chopped green onions
2 T. minced fresh parsley
1/2 t. oregano
3 eggs
3/4 cup grated Parmesan
3/4 cup milk
1/2 cup bread crumbs
salt and pepper

Cook artichokes and drain; chop into bite size pieces. Place in 8* square pan that has been brushed with olive oil and sprinkled with bread crumb. Heat 1 T. of olive oil and sauté green onions, parsley and oregano. Set aside.

Combine eggs, cheese, bread crumbs and milk, season with salt and pepper. Pour into onion mixture then pour over artichokes.

Bake at 375° F. for 25 minutes.

Cut into small squares and serve hot or cold as an appetizer or cut into larger squares and serve as a vegetable side dish.

Serves 8 -10.
