Chicken Casserole
5 qts. chicken, cooked, diced
5 qts. celery, chopped
4 bunches green onions with tops, sliced
16 oz. chopped green chilies
11 oz. pitted ripe olives, sliced
4 cups slivered almonds
40 oz. shredded cheddar cheese, divided
4 cups mayonnaise
4 cups sour cream
10 cups crushed potato chips
Combine the first six ingredients. Add 2 cups cheese. Mix mayonnaise
and sour cream; add to chicken mixture and toss. Spoon into four
greased 13x9x1" baking dishes. Sprinkle with chips. Top with
remaining cheese. Bake, uncovered, at 350�F for 20-25 minutes or
until hot.
