Crab Salad
4 lbs. crabmeat, picked clean
1/3 cup lemon juice
30 hard boiled eggs, chopped
1 pt. black olives, sliced
1 lb. toasted almonds, sliced
1 qt. mayonnaise
Combine all ingredients in mixing bowl and toss lightly. Chill.
Yield: 4 quarts
Chef's Tips: Cucumbers may substitute for olives. Substitute French
Dressing for mayonnaise, if desired.
