Herbed Rice Pilaf Recipe

Herbed Rice Pilaf

3 C. uncooked long grain rice
3 C. chopped celery
3/4 C. chopped onion
3/4 C. butter
7 1/2 C. water
3 pkg (2 to 2-1/2 oz) dry chicken noodle soup mix
6 T. fresh minced parsley
1 1/2 tsp. dried thyme
3/4 tsp. rubbed sage
3/4 tsp. pepper
3 T. chopped pimentos, optional

In a large skillet, cook onions, celery and uncooked rice in butter, stirring constantly until rice is browned.

Stir in the next 6 ingredients and bring to a boil. Reduce heat, cover and simmer for 15 minutes.

Stir in pimentos, if desired.

Remove from heat and let stand, covered, for 10 minutes.

Serves 18
