Green Beans with Honey Cashew Sauce

1/2 cup butter

1 1/2 cups chopped, salted cashews

6 T. honey

3 1/2 lbs. fresh green beans, blanched, and drained.

Saut� cashews in butter over low heat, 5 minutes.

Add honey and cook 1 minute longer; carefully watching so as not to have any burning. Pour sauce over beans and toss until coated.

Serves 10 -12

To prepare ahead, clean and blanch the green beans to desired doneness. Blanch just before serving to reheat. The best way to do this is to have a pot of boiling water. Place green beans in a basket and drop into water. When water comes back to a boil remove from pot. Drain and serve with sauce. Prepare the cashews while beans are cooking and finish the recipe.
