Vidalia Onion-Rice Casserole

3 lbs. vidalia onions

1/2 cups butter

1 cups uncooked rice

2 cups water

1 1/2 cups Swiss cheese, shredded

1 1/3 cups half-and-half

Preheat oven to 325� F.

Saut� onions in butter in a large skillet until soft, about 10 minutes.

Boil rice in saucepan 5 minutes. Drain well.

Place onions, rice, cheese and half-and-half in greased 10 x 13 inch casserole. Bake uncovered, 1 hour.

8 servings

Note: the casserole's flavor improves when assembled and baked in advance. Simply reheat at 325 degrees for about 20 minutes.
