Almond Fruit Bread

Preheat oven to 350 degrees F. Grease a 9 x 5-inch loaf pan.

Measure into a large bowl:

1 3/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
2/3 cup white sugar

Stir with a fork until well blended.

Beat together:

1 egg
1/4 cup vegetable oil
1 cup milk
3 tablespoons Amaretto liquer or milk
1 teaspoon almond flavoring

Pour the egg mixture into the center of the flour mixture. Immediately add:

1/2 cup. coarsely chopped, glazed cherries (4 ounces)
1/2 cup coarsely chopped glazed pineapple (4 ounces)
1/2 cup chopped mixed peel (4 ounces)
1/2 cup toasted slivered almonds (2 ounces)

Stir only until all ingredients are moist. It will be lumpy. Turn into prepared pan. Bake in preheated oven for 1 hour and 15 minutes, or until a thin knife comes out clean except for a bit of fruit on it.

About 231 calories per slice
