Berry Mini Breads
1/2 cup butter or
regular margarine, softened
Preheat oven to 350 F. Grease and flour four 5 3/4 x 3 x 2 inch loaf pans.
In a mixing bowl, cream butter and sugar. Add eggs, one at a time. Beat well after each addition.
In a bowl, combine baking soda, baking powder, and salt.
Add to creamed mixture alternately with the buttermilk . Stir in cranberry
Bake at 350 F for 25 to 30 minutes or until a wooden toothpick inserted in the center comes out clean. Cool for 10 minutes before removing.
Transfer to wire racks and cool completely.
Yield: 4 loaves
