Lemon Nut Bread

1 1/2 cups flour
1 tsp. baking powder
1/4 tsp. salt
1 cup sugar
1 stick butter, softened
2 eggs, beaten
1 tsp. lemon extract
1/2 cup milk
1/2 cup chopped pecans
grated zest and juice of 1 large lemon
1/3 cup sugar

Combine the flour, baking powder and salt in a bowl and mix well.

Beat 1 cup sugar and butter in a mixing bowl at medium-high speed until creamy, scraping the bowl occasionally. Add the eggs and the flavoring and mix well. Add the dry ingredients alternately with the milk, mixing well after each addition. Fold in the pecans and lemon zest.

Spoon the batter into a greased 5x9-in. loaf pan.

Bake at 350F. for 1 hour.

Drizzle the hot loaf with a mixture of the lemon juice (from the whole lemon) and 1/3 cup sugar. Cool in pan on a wire rack.

Yield: 12 servings
