Lemon Pecan Bread

1 c. sugar
1 c. butter
3 eggs
2 tbsp. lemon extract
2 c. flour
1/2 tsp. baking powder
1/2 tsp. salt
1 c. chopped pecans
1 c. white raisins
1 tsp. grated lemon peel

Preheat oven to 400 F.

Cream sugar & butter until fluffy, add eggs, one at a time, beating well after each addition. Add lemon extract.

Sift flour, baking powder & salt together, add to egg mixture, stirring until blended.

Add pecans, raisins & lemon peel, pour into greased loaf pan. Bake for 10 mins. Lower temp. to 350 F.

Bake for 1 hr. longer.

Serves 8
