Lemon Tea Bread
1 cup unsalted butter
2 cups sugar
4 eggs
juice and zest of 1 lemon
4 cups flour
1 tbsp. baking powder
1/2 tsp. salt
1 cup milk
Cream the butter and sugar. Add the eggs and mix well until light and fluffy.
Blend in the lemon zest and juice.
Sift the dry ingredients and add alternately with the milk.
Divide the batter in half between 2 greased loaf pans and bake at 350�F. for 45
minutes to 1 hour or until a tester comes out clean.
Syrup:
2/3 cup sugar
1/2 cup fresh lemon juice
Heat the sugar and lemon until dissolved. Spoon the lemon syrup over the bread
when it comes out of the oven. Let cool and remove from pan. |
